ALMA - The International School of Italian Cuisine is recognized as the Worlds leading Educational and Training Centre for the Italian Food, Beverage and Hospitality Sectors at an International level, Training Chefs, Pastry Chefs, Bakery Chefs, Sommeliers, Professional Waiting Staff and Restaurant Managers.

ALMA is conveniently located in the heart of the Food Valley, in the beautiful Ducal Palace of Colorno, a few kilometres from Parma, proclaimed by UNESCO as the “Creative City of Gastronomy in 2015” in recognition of its heritage of PDO and PGI delicacies and culinary specialities, as well as Capital of Culture 2020 & 2021. Parma is also the seat of the European Food Safety Authority (EFSA).

The School has a team of over 30 teachers, both academics and chef instructors and collaborates also with over 120 chefs and academics in a 5000 square meters campus devoted to education, including seven training rooms, two pastry laboratories, one training restaurant, seven demo rooms, all classrooms equipped with state-of-the-art technologies and a library providing students with access to 12,000 books.

With all the necessary equipment and technology, it is the ideal setting for training students. ALMA is a school that prepares its students for the world of work, welcoming young people from all over the world with different educational backgrounds and guiding them on the path to becoming professional chefs of Italian Cuisine and Pastry.

WHAT KIND OF STUDIES YOU ARE LOOKING FOR?

Long Course

1-Year Course dedicated to Italian Cuisine, organized in 2 levels of preparation:
3.5-Months: Foundational Level
8-Months: Advanced Level

ITALIAN CULINARY PROGRAM

1-Year Diploma Program (English Taught : Starting from the Basics, it moves up to The Advanced Level and offers a fully and professional Italian Food & Cuisine Study Experience)

The Program is designed to offer a «love-at-first-sight» experience of the Italian Cuisine, students will be able to attend training and demonstration lessons as well as travel across Italy accompanied by ALMA teachers and visit the most important Italian food excellences, food & wine producers and food markets

This is a Master course of Italian cuisine designed for international students: an opportunity to live the Italian Cuisine from a privileged point of view, learning the best advanced techniques with ALMA chef instructors working with excellent raw material during training lessons and meeting the greatest Italian Chefs, discovering and tasting the typical regional products during the field trips and visiting producers around the Italian Food Valley. The Italian Culinary Program (Unit I and Unit II) is accredited by Region Emilia Romagna and issues certificates that are recognized all over Europe.

The course involves a Trainee-Ship Phase.

1-Month Optional Traineeship

ITALIAN PASTA PROGRAM

3-Weeks Certificate Course (English Taught for International Students aspiring to learn Techniques of Pasta Making and Production)

This is a new iconic course that offers complete Beginners the possibility to enter the World of Italian Pasta Production, Learning Specific Techniques for both Dry and Fresh Pasta as well as how to deal with Production for Sales and Catering Service.

ITALIAN PASTRY PROGRAM

4-Weeks Certificate Course (English Taught for International Students aspiring to be ready to access the industry with a focus on the Italian Tradition in the Pastry World)

This is a new iconic course that offers the possibility to start their Career as Pastry Chefs and Build a Consistent Knowledge of Pastry Making.

This program represents the chance to access the Industry with a focus on the Italian Tradition, thus having a Unique Specialisation in the sector.

2-Months Course in France and Italy dedicated to Pastry Arts, organized by ALMA × ÉNSP ECOLE DUCASSE
1-Month Optional Traineeship

ITALIAN AND FRENCH PASTRY PROGRAM

8-Weeks Diploma Course (English Taught for International Students seeking Excellent Pastry Training dedicated to the Italian and French
Pastry Tradition and Culture)
